Farmers Market: Orzo

Orzo, which is Italian for barley, is a pasta that looks like rice. It's made of wheat and is popular in a variety of recipes like pasta salads, pilafs, casseroles, soups and stuffed peppers. It is a great base for a meal because it is so versatile. It can be delicious with just butter or made into an elaborate dish with chicken or shrimp. Because orzo is small, it cooks very quickly, making it a convenient go-to. Orzo is similar to rice in its nutritional information, but it has iron, fiber and protein.
