Cream Cheese Frittata

Frittatas are an amazing dish. They are a wonderful breakfast, snack or even dinner. And Kim, the Foodie Tourist has a most awesome recipe that we love because it's the perfect way to clean out your refrigerator!

Kim says, "this recipe was a result of cleaning out the refrigerator and putting all the food that was close to expiration on the counter. I noticed there were a lot of complimentary flavors so I started cooking rather than throwing them away." You can basically throw whatever you have in this recipe, from red peppers to onion.

To make this yummy recipe, you will need:

Fresh asparagus

Roasted red pepper

Sun-dried tomatoes



Salt and pepper


Olive Oil


Cream cheese, softened

Parmesan cheese
