Homemade Pimento Grilled Cheese

It's Dairy Month, as you may have heard, and what better time to enjoy all of the amazing foods in the dairy family. Pimento cheese is a Southern delicacy, but one that you can easily make yourself. This cheese is awesome on crackers, celery, a sanwich and more. Here's the recipe:

2 to 3 tablespoons fresh-grated or prepared horseradish

12-ounce package sharp cheddar cheese, shredded

1 (4-ounce) jar chopped pimentos, drained

1/3 to 1/2 cup mayonnaise

1 teaspoon Dijon-style mustard (optional)

Freshly ground pepper

Pinch ground red pepper

1 large clove finely minced or pressed garlic (optional)

Combine ingredients; cover and chill.

For a delicious lunch, use pimento cheese the next time you cook a grilled cheese. It will change the way you look at lunch!

You just need to butter two pieces of bread. Spread pimento cheese on the insides (butter facing out) and cook like a regular grilled cheese in a medium skillet. To really add a kick, put some cooked bacon on the sandwich!
