Shredded BBQ Beef Sandwich Recipe

(Makes 6 to 8 servings) 

For a smoky flavor, add a drop or two of liquid smoke to the ingredient list. This beef is also very good spooned over mashed potatoes or rice.

1 tablespoon canola oil

2 pounds boneless rump roast

½ cup low sodium beef broth

1 teaspoon garlic powder

1 cup finely chopped onion

½ cup tomato paste

¼ cup brown sugar

1 tablespoon prepared mustard

½ teaspoon hot sauce

¼ cup cider vinegar

6 to 8 bagels or hamburger buns 

Pour the oil in the slow cooker pot or a frying pan on the stove. Brown the beef on all sides in the slow cooker according to the manufacturer's instructions or in the frying pan over medium-high heat.

In a bowl, combine the beef broth, garlic powder, chopped onion, tomato paste, brown sugar, prepared mustard, hot sauce, and vinegar. Pour the mixture over the beef in the slow cooker. Cover and slow cook on low for 7 hours or until the beef is tender.

Remove the beef from the sauce in the slow cooker. Place the beef in a large bowl. Trim any excess fat.  Shred the beef with 2 forks. Return the shredded beef to the sauce in the slow cooker. Cover.  Turn the heat to high. Cook for 1 hour.

With a slotted spoon, pile the shredded beef on toasted buns. Serve immediately.
